- 1 can black beans, rinsed and drained
- 3 oz fresh spinach (or use frozen—thawed and squeezed dry)
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 2 tsp smoked paprika
- ½ tsp ground cumin
- Sea salt to taste
- Optional: pinch of chili flakes or cayenne for heat
For the smoky tahini drizzle:
- 2 tbsp tahini
- 1 tbsp lemon juice
- 1 tsp smoked paprika
- 1–2 tbsp water (to thin)
- Pinch of sea salt
Instructions
Make the rice bowl:
- Sauté garlic: Heat olive oil in a skillet over medium heat. Add garlic and cook until golden and fragrant.
- Add spinach: Stir in spinach with a pinch of salt and paprika. Cook until wilted (about 2–3 minutes).
- Mix rice and beans: Add cooked rice and black beans. Sprinkle in paprika and cumin. Stir well to coat.
- Finish and serve: Taste and adjust seasoning. Add chili flakes for heat if desired.
Make the drizzle:
- In a small bowl, whisk together tahini, lemon juice, smoked paprika, and sea salt.
